Zoe Bingley-Pullin's Turmeric Cauliflower 'Rice' Salad Recipe

  • ½ tsp honey
  • 1 tbs tahini paste
  • ½ tsp floor cumin
  • Salt and pepper to style

Methodology

Step 1.
To make the dressing, whisk all elements collectively in a small bowl, put aside.

Step 2.
Warmth oil in a fry pan over medium warmth, add leek and sauté for 3-4 minutes till mushy. Place cauliflower florets in a meals processor and pulse till a ‘rice’ like consistency kinds.

Step 3.
Add cauliflower to the pan and gently stir-fry till softened, then add turmeric and fry for 1-2 minutes or till golden. Add spinach and half the coriander leaves and take off the warmth as soon as frivolously wilted.

Step 4.
In a bowl mix, cauliflower rice, pistachios, cranberries, tomatoes and goat’s cheese, earlier than drizzling over the dressing.

Step 5.
End with a sprinkle of contemporary coriander and serve.
