    • Components

      • 1 , roughly chopped
      • 1 thumb-sized piece , peeled and grated
      • 2 , bashed
      • 200g , roughly chopped
      • naan breads, warmed, to serve (non-compulsory)

      Technique

      • STEP 1

        Put the onion, ginger and garlic in a meals processor and blitz to a clean paste. Warmth the oil in a big flameproof casserole dish or pan over a medium warmth. Add the onion paste and fry for 8 minutes or till flippantly golden. Stir within the curry paste and fry for 1 min extra. Add the tomatoes, tomato purée, sugar and cardamom pods.
